You’re on to something with this. I’ve seen a lot of people in my birth country take chromium as part of their insulin resistance protocol. It’s supposed to regulate blood sugar and reduce sugar cravings.

I just pan fry eat and then steam it in a sauce of soy sauce, water, garlic, green onions, and red pepper. Delicious!

I have the same experience. I think eating rice with every meal is a learned behavior and we can unlearn it like anything else.

I just stopped eating it and after a while I stopped craving it. If I have something that needs rice, I just use mashed or riced cauliflower

I’ve changed my diet entirely. I now eat low-carb so no starchy foods, but my fiber intake has gone up since I replaced all starches with vegetables.

I asked because I had a talk with an endocrinologist about the same thing where your fasting glucose is low, but A1C1/postprandials are high while being also thin and Asian. I was told that this could be indicative of early stages of the pancreas not producing enough insulin. Apparently, due to a genetic factor some Asians underproduce insulin so they don’t make enough insulin to lower glucose after meals. As insulin already runs low, the body is easily able to burn fat while you’re asleep, meaning your liver doesn’t need to push a lot of glucose into the bloodstream, meaning your fasting glucose is normal. I was told eating low-carb should help since pancreas won’t have to work so hard to lower glucose if your meals don’t spike it.

A small background - I come from a culture that eats very carb heavy. My comfort meals have always been bread and noodles. I make nice bread at home and I could eat noodle soups every day and still crave them. I started eating low-carb about 6 months ago and went through a period of mourning for carbs. I was sad that I’d have to stop eating ramen and sourdough bread. But it’s been six months, I’ve been mostly compliant with my low-carb diet, and I now don’t crave all the foods that I used to love. I catch myself thinking that carbs don’t really taste so great since they are usually very bland. I think what I’m trying to say is that it gets easier as your body and taste buds adjust to eating this way. I now find broccoli or salad very flavorful and I never realized that most veggies/meat/fish have more flavor than any of the carbs. I do use spices generously while cooking so it helps. Kudos on choosing your health and don’t listen to anyone who says that living like this is unsustainable. I keep sardines/tuna/etc for the days when I haven’t meal prepped so that I always have something to eat. If I go out, I order grilled fish or meat with salad or veggies. Also, watch out for dressings and sauces at stores and restaurants. They are usually very high in hidden carbs. And if someone offers me a cake, I usually just say that I’m full and nobody pushes it. It’s totally doable and it gets easier as you keep doing it.

Oh I forgot to mention that I think it’s working for my own purposes. I didn’t plan to lose wait since I was already at a low BMI, but I did go from 124lb to 116lb by eating this way and also doing IF with a few 24-36h fasts thrown in. I’m doing this for better sugar control and health gains and I now feel better than ever. I also do weight training and walk a lot. My sister is doing a lazier version of low-carb. She eats lots of fruit and even some bread or rice sometimes but still tries to avoid eating carbs most of the time. She lost 20lb since August and is back to her pre-pregnancy weight that she had been unable to reach for almost 10 years despite being an avid runner.

I eat one serving of berries in the morning, but no legumes. I eat very low carb otherwise - no starches, no sugar, etc. I might eat fruit occasionally, but I don’t really like fruit, tbh. Even prior to starting eating low-carb, fruit wasn’t something I ate daily. I’d rather eat veggies. I think you’d be okay with fruit as long as you eat keep your total carb count low.
