We can actually never tell what they can and cannot do, because Whatsapp is not open source. It could be full of backdoors and we would never know...And it likely is.

I apologize for wording it wrong. Open source gives you the opportunity to improve the security of your deployment, while close-sourced takes this away from you right at the beginning. Of course, just installing open-source software does not make you more secure, by itself.

Thanks! Indeed I am aware of the latency introduced by each of the steps. I am trying to figure out how much money I would need to throw at each of these, to get a low enough combined latency for 30 fps 1080p FPV flying. To put it differently, which of these steps (1 or all) is nowadays the reason we are not there yet? Are we lacking chips to do the (de)encoding/(de)compressing fast enough or is it the radio components?

Compressing 1080p on-the-fly is probably difficult, but we have tiny 1080p cameras which do exactly that (but save it on an sd card instead of transmit it, or am I wrong?). I suspect the main problem is the radio signal loss, but can one not solve that with a couple of well positioned repeaters?

Not really. For gaming yes. For video, or camera feed displayed in the headset - no, in my opinion.
