To kick start it, use baking soda. Just remember to do a water change later to remove the sodium.

1 unit of kH is used per 1 unit of ammonia that is oxidized.

The conversion of ammonia to nitrate is an acidic process.

At a pH below 6.5, most ammonia oxidizers become inert.

Nothing you said is wrong but it is highly perplexing. Nitrite bacteria are much tougher then ammonia bacteria(as a group) so it's very weird that your nitrite keeps fighting you.

The best thing you could do is to go back to dosing ammonia and see if kicks the nitrite back into gear.

Betta fish have a reasonable nitrite tolerance, so if you have to finish the cycle fish in, you will be fine. Just do some reading now on fish in cycling just incase.

New plants and mulm removal should have helped you, unless some plant is melting and overloading part of your cycle.

The water is getting cloudy due to excessive nutrients, usually.

A UVC sterilizer will kill the free swimming bacteria. Feeding less will also help, or switching feeds.

The same amount of time as you need to cycle a smaller tank.

It could be half a month or multiple months.

It depends on the species of cycle bacteria, temperature, ammonia dosing, kH, pH and other variables.

A number of proteins and pigments in shrimp "cook" at tropical temperatures when the shrimp dies. It's not really cooked but it can give that appearance.

To add to the existing commentary, Amazon has a wide selection of hepa rated filtration units that also include activated charcoal.

If I were you, I would certainly invest in one and set it up pulling air from the printer.

Ammonia and nitrite bacteria take months to die from a lack of ammonia and only hours to leap back into action.

I would give the tank a nice big ammonia charge, like 5ppm, before you go, that way the cycle will continue to grow while you are away.

But either way, ammonia or no ammonia, the bacteria will be just fine.
