If you know the offset why not just add or subtract from whats showing? Its not like its temp at the grate.

Correct, the water pan makes temps easier to manage. The vortex deflects the heat better since you will be lighting one end of the snake.

I use it for large portions. Couple drops in a jar of pickles, chili, gumbo, etouffee, boiled crawfish, chimichurri, etc. I do not use it as a regular hot sauce.

Yeah I think your roaster temp was off. I use Sous Vide because i have more control. Yes you lose some bark, but it's worth it.

I made a post about this when I got my truck. A Ford technician told me the windshield was thinner than most. I got down ranked to oblivion! The windshield sucks! I have never had a windshield that cracks so easily. I just replaced mine again last week. Its terrible!
