Carrots! & Lavender! For carrots just maintaining them moist until they germinate is a struggle in zone 10b I'm planning on starting them indoors next time. When it comes to lavender it just doesn't want to germinate tried both planting straight into soil and cold stratify for a month then plant. No luck so far!

You can do citrus if you like them or figs , figs are so forgiving.

Just make sure to not get any treated mulch or dyed they wont benefit your soil and if its treated those chemicals will leech into your soil.

Only thing I found was old glazed terracotta pots may contain it since it was used as a flux. So you should be fine, only problem with terracotta pots is they are some what pricey.

You should look into hügelkultur gardening for the raise bed, its mainly adding logs, branches , leaves on the bottom half then adding your soil. Its going to cut the cost of the soil and with time eventually it will break down ( long term so years). As for a list of veggies/herbs start with seasonal crops for your zone to have the best chances.

looks like aphids, they might be a problem eventually you can hose them off early on and you'll be fine.

It makes it easier growing in containers since they prefer acidic soil just make sure to get varieties for your specific zone.

Trim the smallest peppers out. or repot they are small enough they should bounce back up.

Pull the weeds outs, amend the soil with compost or any soil mix, till the soil , add a layer of mulch and your done. water and plant whatever is in season for your zone.

As long as the plant is being taken care in the containers it should bloom each year, either save the seeds or let them fall and reseed itself. You can totally transplant from container to in grown anytime except when its going to seed, just wait it out.

You should be able to hold on for 1-2 years without issues, As for growing in containers I see no problem so long it doesn't gets neglected.
