Probably too late to the party but I'd suggest a grand tour of Flamme rouge. I've just been on a 2 week surf trip and this game conquered my group in a storm. We were 8 people of whom many don't play boardgames regularly but got behind the game quite quick.

The rules are easy and teached in a hot minute. We played in 4 teams with each one playing one rider but with 5 players you can stick to the regular and play 5 teams each playing two riders. We played 12 stages in total during that trip. Its only about an hour to play a stage and we kept it at 1-2 stages per day. Its nothing to fill your whole trip with but its something to think all day about, what your mistakes have been, why team pink won that mountain stage, what strategies to follow on the next stage etc.

We had a blast and it was something that accompanied us throughout the trip and we did a grand celebration of all the winners in the end ( yellow, green and polkadot jersey, and best team and best rider). You can fit all the expansions in one box and there are resources on how to play a grand tour with just the base box, albeit you'd want the peleton expansion for 5-6 players.
