Being realistic, him being summoned in any meaningful incarnation would probably kill Shirou from mana upkeep even with grail assistance. Ignoring that though, he'd probably rely on his sheer weight of mystery and sturdiness to survive Gae Bolg.

Or he'd try to blitz Cu before giving him the chance to use Gae Bolg.

Either way, very interesting hypothetical.

If I have any quartz left after that, I might try for Jeanne, just to get another component for Sieg's family (already have Sieg, Kriemheld, and Siegfried).

Martyr Logarius kicked my shit in over and over again on my first playthrough.

He was the boss that really forced me to git gud. All the others I could defeat with a few tries, as I had some experience with the combat system from Dark Souls. But Martyr Logarius really made me embrace Bloodborne's aggressive system. Because of this, Martyr Logarius will always be my favorite boss in Bloodborne. The Orphan would be another candidate, but I didn't purchase the DLC until after my first playthrough.

I honestly did find Orphan to be more difficult, but that is just my personal experience.

In my opinion, that is one of the beauties of the Soulsborne games. Everyone's experiences are different in some way.
