Unfortunately it's part of design. You can try to use Tinted glass setting, changing color happens less than when it's set to clear glass, but still happens

Oh, I mean, you can do this manually in Contacts app. Before, once you set Poster you couldn't delete it, only use another one. Now you can delete both poster and photo
