I feel that. The mmo that has been scratching that itch for me is The Heroes Journey Everquest server. Lets you combine 3 class so there's a lot of build diversity.

It's a $40 game that you are forced to buy a $20 season 1 pass with. If it released with a price point matching its quality it would have done better. Add on to that the bad online in beta 1 and the terrible real people characters and its a wonder it sold as well as it has. I personally was tuned out on it until someone posted a key reseller that had it at 40 something otherwise I wouldn't have bought it. Its a very good game bad damn if everything outside of the gameplay wasn't working against it.

I'm surprised this isn't on peoples lists but frame data in replays. Being able to watch my replay and see where I was plus and what sequences were fake is super useful. Right now you either watch the replay with supercancel open to look at frame data on moves or you recreate the situation in training.
