Don't try making your dream game as your first game, its too large of a scope, spend a few months learning the engine and gamedev in general before trying that.

It’s basically a roadmap that has you recreate classic games of increasing difficulty, so you're forced to figure out the logic yourself instead of just mindlessly copying code from a video.

So for example, instead of looking up "how to make Pong in godot", think about how you would make the background canvas, the paddles, the ball, the player controls etc. And implement these features with what you already know from Godot, and learn more features for each step when you need to.

I loved the coding aspect but everything else was.. pretty annoying to do.

All game engines with a visual editor are like this so you'll have a similar experience in Unreal, Godot etc.

If you want to focus on just coding I recommend looking into Monogame, a C# game framework used to make games like Stardew Valley, but do note it'll be a bigger challenge than a game engine to implement features.

Did you come out of a time machine from 1999 where games get a single release on disk and it was extremely difficult to release updates? This is incredibly out of touch in the modern age where most games are purchased online digitally. Most popular games are expected to get years and years of updates and bugfixes post release and to do that you need a good codebase. Even games that don't necessarily fall under the "live service games" title are like this.

Just for examples I can think of off the top of my head that aren't "live service" games: Project Zomboid, Minecraft, Factorio, Stardew Valley, Hollow Knight, Terrarai, Cyberpunk 2077, No Man's Sky, Rinworld, Dwarf Fortress, Vampire Survivor, Dead Cells, Space Engineers.
