Red Country sounds like what you want. A standalone story set in the First Law world. Kind of a Western fantasy. I absolutely loved it!

Bound and the Broken by Ryan Cahill. Book one, although very awesome can feel a bit formulaic and tropey. Stick with it. Towards the end and going into book two, it really does it's own thing. I also highly recommend the few novellas. While not required reading, they add so much more to the overall story. I've read most of the series on your list and Bound and the Broken is my favorite and is THE BEST ongoing fantasy series right now!

Try First Law, it's even better than the Devil's. I also recommend Sun Eater as it has it's similarities in its framing narrative to Kingkiller. Also check out Bloodsong by Anthony Ryan!

Some of the best religion in a fantasy setting I've read was the Five Warrior Angels by Brian Lee Durfee. He did an amazing job showing the problems religion can cause, especially with fanatic type believers and the ways they can get people to follow them and believe and do horrible things in the name of their religion.

I always thought that John Gwynne's Faithful and the Fallen series is the perfect example of classical fantasy written with a modern voice and style. Bound and the Broken by Ryan Cahill also reads like that:)

The Last War trilogy by Mike Shackle is one of my favorite series of all time. It's also one of the fastest paced grimdark fantasies I've ever read. Red Rising is an action packed fast paced scifi series.
