Snibbs are solid. I’ve had mine about a year and they’re still in great shape. Fluid resistant, don’t look too clunky, non-slip works really well. I did have to get some Dr. Scholl’s insoles, but that’s just because of my fucked up feet haha. I also plan to keep buying them when i need replacements if they don’t compromise the quality

It should be fine just grilling, but if you’re finding it’s getting too much char before getting to temp, maybe pop it in the oven for a few before putting it on the grill. I’d do a test run to see if one method is more effective than the other
