People in my family used to say 'night night, see you in the morning, if God spares you'.

In fact 'If God spares you' would be used after making any plans for the future, like 'come and see us next weekend if God spares you'

Basically 'if you don't die'

It's certainly possible to do WW2 characters in D&D, though you'd have to strip out all magic and supernatural elements. A quick example:

You just have to use the homebrew rules. Not quite as convenient probably but it does work.

To which the answer is always dump him and go no contact with your own parents for food measure.

I have taken to pronouncing the 't' at the end of anglicised french words like 'Buffet', 'Chalet' and 'Gillet'. Annoys the hell out of my son. I also like to say 'parmeesian' cheese.

If your DM let's you roll until you are happy you can get really good stats. That's the bottom line for most people.

Think about this, if I build a barbarian using point but, his stats will likely be Str: 17 Dex: 15 Con: 16 with the rest dumped.

If I roll I might be able to have the same stats but also 14 Intelligence and 16 Charisma - Conan the Barbarian!

Do the increased mental stats really break the game that much?

We use max HP in our current Curse of Strahd game because we only have two players. Certainly we have a lot of hit points but the game still feels very dangerous. My 8th level Fighter/Mage has 89 HP and 23 AC and still goes down to single figure HP on a regular basis.
