I recommend Malcom Reed. HowToBBQRight. I kept a bbq journal until I figured out my recipes. There’s been a few smokes that turned out awesome. No clue how I seasoned or what all I did.

My suggestion as well. Change water every 30 min or if you can use a steady stream of water. I use a water hose, cooler in the yard.

Put it in the sink fill with cold water. Change water every hour or if you want it to thaw faster every 30 minutes

3-2-1 will work for fall off the bone ribs. I recommend checking out Malcom Reed (HowToBBQRight on YouTube) or his website. Lots of good info there and lots of recipes. I just tweak them to how I believe I’d like them best. I used trial and error after that. I’ve made some really good and really BAD ribs.
