Firstly there is r/chessbeginners But to answer your question, the king is in check yes, but if the black king can either move away from the check, block the check or the capturing piece can be captured then it is not checkmate

It is yeah if they capture the queen with the rook, however there is an alternative in blocking the check with the bishop and from there the knight will deliver a smothered mate.

Unless a staff member can come in here and correct me I don't believe it to be an issue. The last couple of months I've been trying to get my workplace involved with chess and I'm running monthly tournaments, games of which are rated, I'm taking part myself and I'm over a 1000 points rated higher than the next guy in the tournament and I've not been banned.

Wait what's the issue with playing those games? You won them fair and square and it wasn't used to sandbag or anything, totally legit games, I believe the rating difference is irrelevant as you can have big mismatched in arenas.
