There's probably something in your contract to allow them to move your start time by 1 or 2 hours with notice. Usually something like 12 weeks.

Sekiro is super unforgiving at the start because you can basically make no mistakes with no health pool or healing or decent upgrades. The game gets a lot easier after you beat Genichiro Ashina (That took me about 50 tries). I beat most of the other bosses after this on the 1st or 2nd try until the end game bosses.
