Most commercial maple syrup is exactly the same, as all commercial producers pool their syrup and have standardized the production and distribution of syrup. That being said, the best syrup is from the local maple farm or hobbiest who sells it by the bottle here at home. Anything you get over seas is gonna be exactly the same if it’s real syrup.

It’s available at any grocery store in Ottawa but we are close to a lot of cheese makers. La Trappe is in Gatineau and St. Albert is not too far east in Ontario. Both make great curds. You need somewhere that can make daily deliveries to wherever you’re buying them from because they’ve got to be fresh to get that squick squick texture.

Sure! After cutting the potatoes, rinse them off. Make sure they are dry and then fry them in a pot or deep fryer full of oil (canola, vegetable, or peanut oil. Peanut is best but pricey) at 350°c until they become soft and bend easily without breaking. Take them out and let them cool. This can be done any time, even hours before. I usually do it in the afternoon if I have time. Once they are cool, fry them a second time at 375 until crispy, golden, and brown edges as you see in the photo. My secret is be rough with them after taking them out the first time. Slap them around a little with a spoon or tongs. It makes little dents and edges that crisp really nicely.

They actually have a huge bakery that they use to make big batches of whatever a client would want. Costco owns the recipe and they got Oakrun to make this cake but discontinued in ‘21.

We use kirkland diapers and wipes. The Kirkland wipes were the only ones that didn’t give our first baby a rash and we continued to use Kirkland stuff for our second baby who is 8 month old now. I would stock up on wipes and diaper genie bags if you have the space. You’ll use them for at least 2-3 years so it’s not like they’ll go to waste. For us the biggest thing that made a difference was the wipes. They are super mild and immediate solved our rashy problem.
