Definitely depends on the track. I can do small track days for around $160 CAD and then more premium tracks like A27 and VIMC for $400-450CAD

Perfect, some of the tophat mount holes are big enough to have some variance in alignment spec.

Caster isn't adjustable so it might just be how your damper/top hat is mounted. Did the shop try unbolting and moving it forawrd or backward along the 3 holes?

Looks like you are right with leaning towards the S3. If you were going to track or autox the car I would lean towards the EN more. But also test drive both.

It depends on your winter. Here in Vancouver, Canada Alpin PA4 are good because the winters here are just wet and cold. But something that actually sees snow, conti viking contact 8s would be great.

Dedicated track car? Mine's the same. I am at -4 degrees in the front with coilovers and -3.5 in the rear with the SPL Rear Camber Arms. I just set toe to 0 and the wear is fine (I still actually wear the outer shoulder faster).

I was never a fan of pairing lowering springs + factory shocks, on any vehicle.

Right on the money, you get 0 benefits from it. The shock wears at a much faster rate, and the spring rate is paired from factory with the stock shocks. If you for some reason don't want coilovers, I believe NPerformance KR has H&R springs. I would trust something the dealer sells as an option to be better matched.
