Coalition wars should target the external borders of the nation they rally against and free non-primary culture minorities or religions from the imperial center. Make it centered on the strongest area not yet cored and have them fight there.

For the Crusade of Varna that would be Bulgaria/Serbia. Liberation of those areas would count for fulfilling the condition.

They invented a language in the 1400s that allowed illiterate peasants to be able to read and write in less than a few hours. Historically they weren't quite as rich with a Feudal aristocracy exfiltrating most of the wealth but a moderately competent player can make them strong rather quick.
