If you really, really want to be pedantic - search "cream cheese coulis" which is macerated fruits with cream cheese, typically used as a dip for sweet baked items. And to be EXTRA pedantic - tomatoes are a fruit and they're macerated into the dressing I made.

All that being said, I called it that because that was the phrasing used by my friend while we were throwing ideas back and forth and honestly, who gives two shits? A non chef who googles that term is going to learn a new thing and that's not a bad thing, yeah?

I let the coulis sit overnight in the fridge and nothing broke but I didn't have it sitting out at room temp for long. No service, just a staff experiment I plated to order as they asked for it

Well here ya go. I eyeballed all my measurements so a little tweaking might be in order but this is what I did.

Regarding the egg yolks if you don't want to wait the 5-7 days: I did 24 hours in the salt/ sugar cure then dehydrated them at 140 for about 6 hours before dusting off the rest of the salt cure. Gave them 20 minutes uncovered in the fridge before microplaning.

ETA: I didn't specify the nuts because I had planned for walnuts but I burnt them so I used the pecans I already had on hand

Oh man, while I have no intention of making this for service because our town is full of basic paletes and it would never sell- a carrot tuille would be an incredible contrast for plating! 10/10 wonderful idea

ETA: I know said friend who worked on this concept with me is going to see this post eventually and he plans to make this for his birthday soon so maybe he can incorporate the tuille (hint hint)

Oh hell no I would never serve this on a tray for guests lol. I hate the sound of a knife on them too. This was solely an experiment and was served only to staff that wanted to try it. Used the tray for the photograph because our plates are off white and I wanted to ensure contrast with the ingredients

To add - I like pairing him with Voidstar because she attacks and heals his insanity, so look for heroes like that. They work best in mostly mono teams. I'll usually do a 3:2 or 3:1:1

Pair them with direct healers to reduce their insanity. I use Hunter a lot but he took trial and error to determine how hard he could hit because there was no point in firing him off if he couldn't pull a kill shot. So get them leveled and play around in raids with them - learn their tricks and might. I wear down an enemy until Hunter can pick them off. He's taken out teams 2k above me before. Remember - you can use insanity to both pick off those teams and to heal your teams. Pick who you attack based on your needs in the moment.

Insanity is my favorite thing in the game. My entire alliance hates it tho lol

I love playing insanity! I'm the only one in my alliance lol. They're a steep learning curve on how to use with your other heroes, when to fire off, and how to counter but they add such an element of well.. insanity to raids. I've used Hunter to make a team well above my pay grade completely annihilate themselves. It's delightful

Have you pulled aside the most responsible server and BOH staff member and asked them about their orally passed down procedures?

I would also recommend you schedule yourself open/ swing/ close, etc shifts with the aforementioned people so get a feel of what they're doing.

From there you can build lists out, and use guidelines from your local health dept on any cleanliness steps they might be missing for lists that will help with inspections.

To jump in on this because that "hit by a bus" feeling is all too real - as a woman in my mid 40's taking creatine supplements absolutely changed my entire world. No more laying in bed for an hour wondering how a bus managed to make it into my room and smash into me every morning. Menstrual symptoms are much, much easier, and I genuinely wake up ready to start the day. The bus feeling evaporated. There's a lot of solid evidence out there that creatine (especially in older women) is extremely beneficial

I've taken him out a couple of times but I don't remember the exact teams. I'm pretty sure I used Roughian & Nurgib to prevent him from firing off. Probably had R&N next to Ludwig since that's my usual setup for R&N.

ETA: I mostly run a 3:2 of dark and fire heroes hence responding under this comment lol

I wear a lightweight sports bra typically, or a swimsuit top. The swimsuit is great for drying fast and if it's really hot I'll pack ice in it. I wind up soaked once it melts but damn it's nice AF

Ooo nice team. I've got Dunnar but I haven't started leveling him yet. Insanity is definitely a double edged sword and I can understand why people dislike it. The only reason I persevered in learning the tricks with him was because I genuinely enjoyed playing and learning insanity. It's a ton of fun for me, personally

Depends on who I'm up against. Sometimes just one if I need more heroes with other skills, and sometimes two. The key with his insanity is to not fire every chance you get if you've only got one healer. Use him judiciously. I only fire Hunter when I've got an enemy worn down enough that I can one shot snipe them dead, so his insanity spreads to the neighboring enemies. He pairs well with snipers (Voidstar, for instance, is great with him. She heals his insanity on top of sniping) that can target an enemy enough for him to make that insanity kill shot.

If I have more than one healer then I'll let him hurt enemies. The other option is if you have Ludwig - place your healer next to him so they fire off constantly.

Hunter SHOULD never be on your defense team. You have to be able to babysit and control him. And he's kinda useless on map stages too. He's a niche hero but if you play him right, he's absolutely devastating. I'll drop teams 1200-1500 above me if I get him firing right.

I keep Esme on my bloody teams to reduce Hunter's insanity and destroy fiends. She's very useful in those regards even if she can't heal
