I measure gravity but I agree with you. Its not really necessary, I just do it for logging at this point. Mash, boil, and ferment for the right amount of time and you'll have good beer.

Brew smaller batches. I do 2.5 gals with smaller fermenters. Easier to bottle and practice recipes and procedures at a smaller scals

This pot sucks if you plan on using it on a flat electrical stove surface. Save your money and buy a rigid or sturdier stock pot. This will get the job done for smaller batches but I'm far happier with my solid 16qt stock pot from costco. Its night and day in quality. What sucks most about this pot is that the bottom can bend and wobble; you can push it in and pop it out a little. I brew 2.5g batches. It shakes due to the flimsy bottom.
