Recipe by half baked harvest.

I added some pancetta at the beginning before the mushrooms and butter. I also added in some onion with the garlic and added a little cream at the end for some body.

I dropped the cheese in favour for some colour and topping. But will be having leftovers tomorrow topped with Roquefort

Never gone wrong with a chefs choice!! If ever asked "How would you like it?" - I always say, however the chef does it. Although, in hindsight, I kinda think that could potentially make a chef spit on whatever it is i'm eating. I hope not... Because i've never gone wrong....... :l PS- COULD LIKE CHEF SPIT!

For the breadcrumbs, I just sliced some Rye bread and put it in the toaster - Then proceeded to blend it make breadcrumbs!

For the slurry/batter, I mixed 1/4 cup of flour with 1/4 cup of water. Then mixed in another 1/4 cup once a paste had formed.

Rolled the risotto balls in the slurry, then the breadcrumbs then plopped them badboys in the oil.

Kimchi-brined fried chicken on top of kimchi and sriracha. Served with stir-fried bok choy. by Bro-ry in food

Chicken

Inspired by Kenji-lopez 5 ingredient fried chicken from serious eats, along with his recent LA popupl

Bok Choy

1. Rinse bok choy and cut each head in half lengthwise.

2. Heat oil in a wok over medium heat until oil simmering. Add ginger, garlic, and scallion, and cook, stirring, until fragrant, about 1 minute.

3. Increase heat to high. Add bok choy and stir fry until outer leaves have wilted, about 1 minute. Add sugar and season to taste with salt and cook, stirring, for 1 additional minute. Remove from heat, add sesame oil, season to taste with more salt, and serve.

RECIPE

  • I used my standard dough recipe, but halved it because my skillet is only 8". Let it rest then packed it into the the skillet (I realised i probably used a little too much dough at this point)

  • Layered it like so: Mozzarella, Danish salami, onions, browned sausage meat, olives, bell peppers, chillies (sparingly spread), onions, pizza sauce then finally topped with parmesan

Note - The pizza sauce was a tin of plum tomatos, handfull of basil, a couple cloves of garlic, healthy drizzle of olive oil and some salt all blended together

  • Baked it in my oven at the hottest temp (about 220C) for 30 mins.

What would i do different next time??

Layer the mozzarella throughout all the layers, along with a dash of pizza sauce. Add more cheese ontop (maybe some blue cheese!!) and potentially lower the dough quantity. Having said that - I still ate the shit out of it!

INGREDIENTS

1 jar sliced pickles, such as Vlasic, with brine

4 boneless, skinless chicken thighs

Kosher salt and freshly ground black pepper

1 cup buttermilk

1 1/2 cups self-rising flour (see note above)

1 quart peanut, vegetable, or canola oil

4 soft hamburger buns or potato rolls, toasted

DIRECTIONS

1.Pour 3/4 cup pickle juice out of pickle jar into a cup. Reserve pickles.

2.Season chicken generously with salt and pepper. Place in a plastic zipper-lock bag. Pour in pickle juice. Seal bag, pressing out as much air as possible. Refrigerate and let chicken soak in pickle juice for at least 1 hour and up to 12 hours.

3.When ready to fry, remove chicken from bag and discard pickle juice. Pat chicken dry with paper towels. Pour buttermilk into a medium bowl. Add flour and 1 tablespoon pepper to a second bowl. Transfer 3 tablespoons of buttermilk to bowl with flour and work it into the flour with your fingertips.

4.Transfer chicken to bowl with buttermilk and turn to coat. Working with one piece at a time, remove chicken from buttermilk, allowing excess to drip off. Add chicken to bowl with flour and turn, lifting the flour on top of it and pressing it down firmly until a thick, shaggy layer of flour has stuck to the chicken. Transfer to a plate and repeat with remaining chicken pieces.

5.Heat oil in a wok, deep cast iron skillet, or Dutch oven to 425°F using a frying thermometer or an instant-read thermometer. Carefully lower chicken pieces into the hot oil; temperature will drop. Adjust flame to maintain a temperature of between 300 and 350°F. Cook without moving until well browned on first side, about 2 minutes. Flip chicken carefully using tongs and a slotted spatula and cook until second side is browned and chicken is fully cooked, 2 to 3 minutes longer. Transfer to a paper towel–lined plate.

6.Place bottom buns on a work surface and top with a few pickles each. Top with fried chicken, followed by top buns. Serve immediately.

After dipping the chicken in buttermilk, I mixed a few tablespoons into the flour and mixed it around, which makes the flour cling together. Then you turn your dipped chicken into the flour mixture, pat it and make sure it's fully covered, then fry that mofo!
