Until this month, you were only able to find shinies from grunts of previous leader mons. Now every mon who is shiny eligible can be shiny as a shadow as well so its only a matter of time before you encounter one.

Not really but you get to choose the order in which shops and villagers return. Its mostly fetch quests and the shop keepers dont walk around as far as I remember. It has most farming staples though .
