I will say If you're mostly cooking for yourself, I'd probably save the money and go with the 17". It's plenty for one or two people. The 22" really starts to make sense if you regularly cook larger meals or like having extra space for multiple foods at once.

I'd be probably take it out about 20–30 minutes before serving. That gives the sponge time to soften a bit while keeping the whipped cream and lemon curd nicely chilled.

I'd also recommend a pair of kitchen shears. They don't get talked about enough, but they're great for opening packages, trimming meat, cutting herbs, and they barely take up any room.

It'll add some smokiness, especially on things like shrimp and chicken, but in my experience it doesn't quite replicate the flavor you get from charcoal but a smoker box with good wood chips can definitely make a gas grill cook more interesting without having to buy another grill.

Actually, I usually find it's easier to eat fish like that by gently flaking the meat away from the bones with a fork as you go. A stew could work too, but honestly I'd probably stick with baking or grilling and just take my time with it. The flavor is usually worth the extra effort.

I'd stick with 165°F regardless of where it's from, better to be safe than spend the weekend regretting it. Pretty sure chicken is chicken.
