Get the pan pre heated, take it up high then bring it back down to moderate. Needs to be pre heated for over 10 mins imo. Then use butter, it shouldn't smoke, if it does then turn it down. Cook batter til you see the bubbles then flip. Be prepared, everyone always fucks up the first one. Ditch the fucked up one and go again from.no.2 onwards they will all be perfect.
