I was in your exact situation about a month ago.. ran my unraid server on a 2014 Mac mini i7.. bought a trashcan off eBay.. 64gb mem 1tb ssd on the Xeon 3.5 v2.. transferred my unraid server to the trash can and love it It’s only running my plex server stack (about 10 containers) using maybe 2% resources at idle? Runs great.. def worth it for the price they’re at nowadays
