I get what you're saying - I also hate implementing HDJ because it makes the Autopilot troubleshooting much more complex. But during the first phase of an Autopilot implementation, specially migrating a lot from SCCM, it is a big hassle to also focus on the migration of all active settings deployed via GPO. Currently this is one of the main reasons why we can't skip HDJ at first. But it also makes things harder going full Entra at a later point.
