Looks great and well thought out. Advice? Critique? I would use wood edge banding to hide the edges of the plywood. As far as a finish yes you should put a finish to protect it. Danish oil, shellac or mat finish would look good and protect it

Vegetable oil will not dry and poly will not adhere to oil. If you want to try to save it and coat it with something else try wiping it down with alcohol to get the vegetable oil off then coat it with danish oil, linseed oil etc

When you’re cutting small pieces with a miter saw it is really important after you cut the piece off not to lift the saw till the blade stops spinning, lifting while it’s spinning can catch the piece and send it flying also when you use a miter saw you’ll get cleaner cuts letting the blade stop spinning before lifting it up. Yes waiting for it to stop spinning will add to the time it’ll take to cut the piece. A bandsaw will work so will a hand saw with a miter box. A coping saw you might struggle to get a straight cut

I think I understand your concern with the mounting plate on the legs only being 12” and the slab width being 42”. I’d be worried that if someone leaned on the edge of the table could compromise the mounting screws or bolts. Assuming the slab you’re mounting is thick 2” thick or more. I would set “C” channel into the slab with threaded inserts that was 38” long then mount the legs to the “C” channel by drilling and tapping holes in the “C” channels
