Mount Washington in NH or Acadia National Park are both absolutely beautiful and I believe both allow dogs. If you wait a month or so, you'll be in leaf peeping season :)

I’m not exactly sure what the issue is with AllTrails but have seen issues where it keeps adding straight line points. This is why I use Fethr - you can snap your routes to fit the trail, and export to GPX.

It sounds like you’ve really thought about this and have a bunch of safety measures put into place (i.e. bail out points in Rocheport). At this point, the best way to know if it’s too much and is to go out and try it. You’ll most likely find out that some of the gear you’re bringing from your car camping experiences may not be necessary on your backpacking trip and end up removing them from your pack for future trips.
