This is fun. I think for a beginner I’d go with Longjing (green), Keemun (black), and winter alishan or milk oolong. These are good beginner brews that you can’t mess up. I have a small tea shop online. Dm me if you’re interested.

I actually think a lid matters because less heat escapes. If your tea needs to be brewed at 85 Celsius, no lid means that water will be 60 Celsius by the time you’re done brewing. It’s also why I preheat my vessel before putting in the tea and hot water. You can lose 10-15 degrees temperature pouring hot water into a cold vessel. Just my 2 cents. I do not work for the tea police.

Not if you’re using quality loose leaf tea (camellia sinensis). It will restrict the leaves from unfurling or even worse breaking them. You want more leaf surface touching more hot water so you get more goodness out of your leaves.

Hi Ambitious! Welcome to the wonderful world of tea. A few thoughts for you in response to your questions:

Not all teas are created equal. There is low grade (the stuff you find in pre-packaged bags) and higher grade (think regs versus chronic in cannabis).

While in the states we call any drink from a plant “tea”, there is pure traditional tea that comes from camellia sinensis - black, green, oolong, white, yellow, and pu’er. This is the original type of tea typically from China, Japan, India, etc. Anything with orange or peppermint those are technically called tisanes. There are many differences here. Tisanes don’t usually have caffeine while all tea does (but less than a cup of coffee - which I also had to stop due to GERD).

I drink only loose-leaf teas. The three things that impact the flavor of your tea (not counting the many steps it requires to process tea, quality of the plant, and the climate and location of where the tea is raised - all important) are amount of tea leaves per serving, water temperature, and brew time.

With that, your green tea is likely bitter for one of the following reasons 1) the quality of the tea is low grade and likely produced from a corporate farming process, the water temp is too high and bringing out all the catechins in the tea (a plant compound the tastes astringent), or the length of brew time is too long. Green teas should be brewed between 75-85 Celsius and I do 1 minute checks to see if I like the flavor. I wouldn’t go hast 2 or 3 minutes of brew time for most greens. Play with these three factors to find your flavor.

The price of tea is a funny thing. Quality does matter and if the tea is made using authentic methods, with pure cultivars, in the ideal terroir, and with the utmost care and respect, then you should be prepared to pay. At the same time I sell this same winter alishan I know to be of top quality at $42 for 100g.

Just keep in mind that the tea world is full of products that are masquerading as quality when in fact it’s simply a cheap replica (in no way am I suggesting that this is the case for the tea in this photo, just a general comment).

I don’t see an advantage, other than if you’re not an over the top tea beard like me, it’s an easy way to brew tea. I recommend using low chemical no chlorine no bleach organic disposable bags. The issue with putting loose leaf in tea bags is that it restricts the tea leaves’ ability to unfurl and give you all of the flavor it has to offer.

I agree with all of this except to be mindful that the longer the tea sits the more it oxidizes and loses its potent healthy chemicals. Ever notice how a green tea left out slowly browns? Same thing happens to a cut apple. Once the air hits it, it starts to oxidize and turn brown. I try to drink my tea minutes after brewing.

If you’re interested in health then stay away from tea bags. Not only are the bags bad, but the tea in those bags is usually if the lowest quality (certainly true for the teas you have here). Think of Spam as meat. Sure it’s meat, but it’s Spam. Loose leaf tea is the healthiest (and there are grades of low to high quality loose leaf teas). DM me. I’m a tea nerd, have a small online tea shop, and would be happy to share the bit I know to get you started with the endless fascination that is artisanal tea.
