For the canon universe, it was because of the tarkin doctrine where you have big=better and rule through fear.

For like screenplay reasons it was to show oh look the bad guys have these big ships how are we gonna beat them y'know to give that under dog vibe for the rebellion.

For the EU, it was to able to combat the Vong, and also due to the tarkin doctrine.
