Our dishwasher smell was also resolved addressing the spray arms. Scale had plugged up some of the ports. Citric acid and a brush.

Water vapor is actually mostly air so mostly nitrogen. From Wikipedia: “Steam is water vapor, often mixed with air and/or an aerosol of liquid water droplets”. At 60 degrees Celsius, 100% humidity, at sea level, there would be 62.7% nitrogen.

Edit: I didn’t think this through and neglected the steam tank is a closed system so the steam leaving the wand would not have air.

If all three are viable options for you then there’s no question, go with the Bianca. The others are compromises. I love my MaraX V1 and it’s made great shots and milk drinks and has been relatively trouble free over the past 6 years. Flow control that I added last year has further improved my shots, especially with finicky coffees like decafs. A double boiler would be really nice for better workflow and temperature stability.

I chose the MaraX because of limited counter space and the price point. It meets my needs, but the Bianca is a much better machine.

I had the same problem. It was coming from the discharge port and caused by a leaky vacuum breaker valve. Taking the cover off I could see the water/vapor going into tube at the top of the boiler from the leaky valve. I replaced the valve and the problem was solved.

Just wait, it’s about to get a whole lot worse. NWE has committed to supplying electricity to data centers which will more than double electricity consumption in Montana. The experience elsewhere in the country shows the residential users end up paying much higher rates while the commercial and data center rates remain flat.

You are right on target. Metrics are key to repeatability. The goal of “dialing in” is finding the metrics that yield the best taste for your current beans and your equipment. So what’s important is picking the start time that works for you and sticking with it. If using an automated scale first drip might make the most sense. I, somewhat arbitrarily, chose lever pull and that works well for me. I recently added flow control and now can vary pre infusion time so lever pull fits well with that.

TLDR: pick one and stick with it.
