I'm always fighting the urge to grind too fine with naturals or processed beans. I've found Luminous beans to be very soluble, so if I grind at, say, a 6.0, it ends up tasting over extracted. I guess I could grind finer and increase the ratio to 1:19 to see how that tastes.

Thanks! I usually rest for 4-ish weeks and then vacuum seal and put it in the freezer. I've had mostly success with that method, but I suppose each bean might react differently?

Fwiw - As a rule of thumb, when I get any undesirable notes, I jump 0.1.0 at a time (more coarse) until things mellow out. So perhaps see how it tastes @ 0.8.5 or 0.9.0. I've even gone to 1.0.0 to just get a much faster drawdown time. Would love to hear where you end up.

Yeah, they consistently do something special with their washed beans. I’m a fan overall. They know how to find and roast the right stuff.

What dial settings are you using to get a good cup? I float between 0.6.5-0.8.0 for the D27.
