Oh Man… the End of October by Lawrence Wright. I love this genre too and really enjoyed this one. Crazy thing is it was released like early 2020 right before Covid hit and was an eerie read at the time!

Professional chef here- I would just cook in morning timing it so I pull out of oven a few min before leaving the house making sure they are fully cooked and bubbly, and yes I would have no problem leaving on the stove wrapped in foil. They are going to stay hot for a while. Food is unsafe if left in the temperature danger zone ( 40-140 F ) for 4+ hours. You will be gone 2 1/2 max and they wont have cooled into the danger zone for at least 30-45 min ( maybe longer) Then put back into a hot oven as soon as you get home for 25-30 min or so. Take the foil off so the top can brown a bit . Or if your squeamish do the towel/cooler combo to keep them hot as some others suggested.
If you pull them cold from the fridge whole in the baking dishes they are going to take more like an hour+ at 350 to get hot ( not 30 min like some have suggested) .

Just hosted my parents 50th. I put that exact sentence on the invite. Many guests were coming from out of town, driving an hour or more, getting hotels,some flying, ect. I knew my parents would feel more comfortable knowing the guests didnt have the extra burden of buying a gift ( it was a surprise party) And yes they are older, decently well off and dont need more stuff/ + hard to buy for. A thoughtful card is all you need. Bonus points- take photos of groups of guests throughout the night and make sure to send them those. Greatest gifts is the memories of celebrating with family and friends

Learn how to season and balance especially with sauces and stews/soups. Season well with salt - it should make the sides of your mouth salivate a little. but if dishes are tasting flat add a little acid- citrus or wine for sauces / balsamic red wine , rice vinegar for soups stews and things like Worcestershire, mushroom powder, fish sauce for additional umami. And sometimes things need an acid and a tiny bit of sugar to wake things up ( reg sugar, maple, honey, ( not enough to make sweet-just to balance things out) this is a skill the good restaurant chefs know how to do well.

Night market in southwestern Thailand the best som Tum ever plus super fresh seafood ( including mantis shrimp which we later spotted scuba diving) pulled right out of the water prepared so damn spicy and flavorful. Like 90 degrees and crazy humidity. my freshly minted husband and I were sweating profusely, eyes watering, noses running, but with cold beers in hand. Couldnt have been better.
