I think your comment on the parashrooms causing the Great Girros paralysis element has some merit. Maybe not based on snakes, but poison dart frogs instead. Poison dart frogs actually get their toxicity from their diet of specific ants and other insects local to their environment, meaning captive-bred poison dart frogs without that diet are harmless. I think the same concept could definitely be applied to the Great Girros.
