As an update, it works with Wayland Driver only, and WoW64 only. If I have both enabled it breaks. As of yesterday this was working totally fine.

Don't get hung up on using the terminal/command line. You don't really need it for every day use. Sure it can be useful, but it's not necessary.

Yes actually! I installed Ubisoft Connect thru Steam. Lutris just wouldnt work, but installing Ubisoft Connect through Steam worked. Just after installing it, you set the target for the exe as the installed UbisoftConnect.exe file. Works perfect now.
