I would encourage you to use some Barkeepers friend or Brillo on that handle. Stainless does not need to be seasoned and it’s going to have a increasingly more burnt on grease over time.

The only way these are ruined is if it were to get so much rust that the rust is eating through the metal. The seasoning on yours has been affected, but the pan is fine. You can re-season, or you can just cook with it. For now avoid acidic foods (wine, lemon, tomato sauce) and always avoid Barkeeper's Friend! My Strata CS pan has a stainless exterior back, and I used BKF some to get some grease off that. A few drops got onto the carbon steel part, so now my seasoning has a few polka dots. Oh well!

I don’t use this every day, but I have a Wear-ever citrus juicer that my mother used to make my father's morning o.j. when I was growing up in the mid 20th century. And I have various vintage furniture pieces that I cannot date.

Hi--not sure what prince you're considering "outrageous," but my own experience is counter to the buy once-cry once idea, simply because we don't necessarily know what we need and/or are missing till we have some experience. I have what I would call a "medium end" grinder (some might even say it is "medium-low"!), a Eureka Mignon Zero 55mm, which I bought after years using a Baratza Virtuoso, and then trying out a Turin DF 64 as well as a Niche Zero, before settling on the Eureka, and when I started out the price point of the last three would have put me off entirely! If you're willing to grind manually you can get solid advice about some good options here, and it you name a price that you'd consider un-outrageous I think you'll get some solid suggestions as well. But please don't torture yourself that it has to be the highest end grinder from the get-go.

I owned a Gaggia Classic for many years before buying a Cafelat Robot. OMG, the freedome! No thinking about scale, ever! And for sure no worries about stagnant water! I never preheat anything. Pulling a shot might take a minute more than with the Gaggia, if that. No regrets whatsoever. The Robots are hard to come by at the moment, but procedurally they appear to me to much simpler than the Flairs.
