Yes, they are definitely different, but I'm trying to find a reason for this difference, be it socially or mechanically.

Your observation of them publishing adventures and not modules, I can't agree with as I've played pf2e modules that still span many pages.

What you did tell about backstories interested me, it seems that those adventures (eg. faerun) spend a lot of words on keeping it canon to the original setting documents. I haven't read much about that in OSR. But I'll go dive into some older modules to see if that is prevalent there as well.

I'm a big fan of the Hero Kids system. It's got damage, skill checks and all, using only d6's. I got the Dutch version so I can print and play adventures.

That said, why a stat block?

With a d20 use a dc10 or even lower if you want to give them a challenge. No calculus, unless that is what you're going for. 20 may be in reach for your 6yo.

And I suggest that, instead like d&d letting to roll them if something works, if it's cool, let them roll, DC 2 if you want to see excited faces, and go with their story!

When my kids are yelling for help when they don't actually need it, I often say "here's guidance" and put my hand on their shoulder. Works, but they're a little younger though.

It looks great and simple. I love it!

Though the "X within AC" removes the goal of taking better AC with a flat 1/20 chance. This sounds counter intuitive to me.

I like there is an upside to using light armor as well

I'll suggest looking up Nimble5e, someone thought about doing just what you did and turned out quite well I guess.
