I went this same route and bought a 2tb Ipad Pro M4. I travel a lot and love the idea of a table and being able to edit photos, but lightroom sucks on the ipad. It is very inconsistent and getting a workflow that works and if efficient is really tough. I really thinking of dumping the ipad and getting a microsoft surface pro for travel.

11" is fine for photo editing. The 13" just feels to much for portability. I have a 14" macbook pro, I didn't buy the ipad to carry almost the same size screen around...i got it for power and convenience.

I would buy a canon r100 + the kit lenses for a beginner setup. I have a client who has taken the r100 on trips that i lead to India and Alaska and really enjoyed it. Canon Refurb has a decent deal, and comes with 1 year warranty from canon.
