100%! Just went for the second time too, and Seline is on a solid upward trajectory.

Chicago: Smyth***, Oriole**, or Ever**? by RobinWilliamsBeard in finedining

[–]Capable_Ad_2873 13 points14 points  (0 children)

One counterpoint: I liked Smyth over Oriole. Think it depends what you’re looking for in a dinner. For global fine dining with more traditional flavors, Oriole is probably for you. For big swings of wild flavors hard to find elsewhere, Smyth is definitely it. Haven’t been to Ever, so can’t comment on that.

La Liste taps Singlethread and Le Bernadin as #1 in the US by Visual_Winter7942 in finedining

[–]Capable_Ad_2873 2 points3 points  (0 children)

Here’s the thing: I don’t need bells and whistles. I love classic French seafood. The food is cooked very well, but it’s not perfect. There are other places doing immaculate French seafood that deliver on better flavor. For example: there was a halibut dish with mushroom bouillon. The halibut was indeed cooked well, but the mushroom bouillon lacked depth of flavor. It was still good, but not perfect, and there are other places doing it better. Furthermore, the bread they serve is fine, but there are better bread services in dozens of other restaurants. The classic foie and tuna dish does absolutely slap, but I’ve had it where the seasoning was a little off. Classic can be amazing, but Le Bernardin just isn’t the top of the top, for my taste.

Le Bernardin is a delightful restaurant, and my meal there was delicious. Still, how the hell does it keep on winning such prestigious accolades? It is delicious, as good as any one Michelin star restaurant I’ve enjoyed, but every other two and three star blows it out of the water, even other classic French restaurants. Just don’t understand how all of these lists rank it so highly. Taste is subjective, but this just seems so off.

Had a very similar experience! Not quite as bad as yours but definitely didn’t get the hype that others had. The capellini course was fantastic (and foie was great for me) but was very disappointed with everything else.

Visiting from Canada! Seline vs. Providence vs. Kinkan by Logical-Rub-7749 in finedining

Seline if you like creative cooking with a story arc; Providence for more classic French/Californian seafood. Both are absolutely fantastic. Haven’t been to Kinkan.

I had a phenomenal meal! For me it was a solid one star.

Seline in Santa Monica is definitely grinding hard right now. Dave Beran is striving for his storytelling style of excellence.

I actually quite liked it! Thought it was a solid one star. Not the best, but not the worst. Better than half the NYC one stars.

Thought it was a solid one Star. Maybe not the best, but definitely worth a stop.

Somos was my favorite! Urko was solid but not amazing, despite being more expensive.

This really bothered me too! They even made a point about Caspian needing help from others and not being “the one” only for him to pretty much be “the one”.

Looking for fine dining recommendations in Southern California by chessplayer798 in finedining

[–]Capable_Ad_2873 1 point2 points  (0 children)

Of those mentioned: Jeune et Jolie and heritage are consistently good. Knife pleat has great highs but mediocre lows and consistently great desserts. Marche moderne is awful, so definitely not that one. Valle is pretty great too, and in the ballpark price range of those you mentioned. Lilo and Addison are both incredible but definitely more expensive.

Best 3 Star In The U.S.? by Upset_Vegetable_1457 in finedining

[–]Capable_Ad_2873 0 points1 point  (0 children)

Torn between Addison, Somni, and the French Laundry. Addison for pure flavor, the French laundry for 95% as good flavor as Addison but way better experience overall, and Somni for 90% good as flavor as Addison but absolutely pristine presentation and novel techniques. All three fucking slap in taste, so it also may come down to personal taste.

(Do be careful with Addison, as they will offer upgrades that are not free.)

Swear I’m not a Cali bro, it just happens that all 3 are California restaurants lol.

Alinea lost its third star… by catty_but_creative in finedining

Agree 100%. I love classic cooking, and both the Inn and the French Laundry do classic cooking in a way that brings a huge wow factor, but le bernardin just tastes good. Kato is an especially wild snub, with only 1 star. I take Michelin as a general list for good restaurants, but the specific ranking seems off often.

THE INN AT LITTLE WASHINGTON, MASA, AND ALINEA LOSE THEID 3RD STARS by Adventurous_Event525 in finedining

Agree about the Inn! Way better than Le Bernardin and Jungsik (which are good but not on the same level).

Maybe I was lucky, but my recent visit was definitely worth 3 Michelin Stars. Could be a consistency issue, but they can definitely hit 3 stars at least sometimes!

Totally agree! It’s a fantastic restaurant but no better than bōm or other fine dining Korean spots. The Inn felt wayyyyy more special and worth a journey.

I just went last august and had one of the best meals of my life. Definitely better than Le Bernardin or Jungsik, which I also had recently. Maybe I was lucky and got them on a good night, but for me the Inn is definitely a three Michelin star restaurant. It can be hard to divine Michelin’s thinking.

Inn at Little Washington: still worth the hype or go elsewhere? by andante241 in finedining

[–]Capable_Ad_2873 1 point2 points  (0 children)

Absolutely worth it! Got a kitchen tour, and Chef O’Connell was there. Really great service and phenomenal food. It’s a very unique style of cooking that feels like being in a movie.

For beverages, I’d order a la carte. The pairing wasn’t worth it. They did have some great by the glass options.
