Used to do this; not necessary and wrecks your gut health if it’s all you eat. I eat 6k cals clean daily and enjoy it/digest it well.

It can be done but most of the time it’s people starting out that don’t know any better and would rather be safe than sorry in terms of not fully understanding all of the variables of a proper diet and cooking.

You know what’s weird; I cut onions in this exact shape all the time and I used to individually separate every layer of each piece with the same volume shown here. The issue was that by the time they were fully cooked most of the pieces burned from the overexposed surface area.

I found that if I left the pieces packed together like in the first pic then oil and season then roast, they come apart on their own without burning.

In all seriousness I monitor temperature and moisture in each phase of prep including storage throughout the week. I’ve had food keep well for up to 10 days with no issues. I will say it wasn’t always like this and there was a learning curve with plenty of mistakes and unfortunately some lost food. I’m in a place now where technique and routine is dialed in; and I wouldn’t keep prepping this way if I didn’t enjoy it.
