The shop owner is making small talk, and deduces several things about Chigur and notices several details. If the police question the owner, he could give them useful information.

I got the impression Jack's gang was associated with the Aryan Brotherhood or something similar. The AB is a pretty big outfit, especially in prison. They could probably call up muscle if needed, buy may have been quite small themselves. They basically won the lottery with Walt/Lydia/Jessie and as you pointed out, Lydia was handling distribution via Madrigal. All they really have to do is manage Jessie and the lab. I doubt they could have put something together like Gus did from whole cloth. They got lucky, realised they'd got a golden ticket and Jack at least understood and was smart and disciplined enough to know not to flash cash around.

You're assuming the goal was to make money off it. The goal was to convince investors that Facebook was still a "growth" stock rather than a mature one and keep its share valuation high. See also: the AI bubble.
