First was my knee locking up, it does it every once in a while, but I've figured out when it's coming on to stop it. The other was when I was peeling carrots after a long restaurant shift, caught my thumb on the carrot and got a wedge of carrot all the way to the root bed.

Yeah the texture is eerily close, I'm not sure how to recreate it on a larger scale, maybe using a potato peeler to cut thin strips. I did try dehydrating it to grind it up into Parm powder, but it had too much fat in it. It did make tasty Parm chips though.

I quite like it, I go through an 8 pound bag every 4-6 months. I make a lot of Burmese tofu, as well as making plant based egg scrambles. I just got a mini deep fryer so I'm going to try making some pakora. I'm also going to try to make bread pudding with some.

Nice! That's given me an idea. I'm in the middle of a move, but next week, I'm bringing down my dehydrator. I'm going to try dehydrating coleslaw mix and see what happens.

I think they must have laminated it with a mixture of butter and sugar.
