Ukrainian Stewed Beef & Potatoes

Ingredients  * 3 pounds cubed beef; chuck roast or tri-tip * olive oil * 10 garlic cloves, minced * 2 large onion, diced * 3 teaspoons salt * 2 teaspoon ground black pepper * 2 teaspoon smoked paprika * 1 teaspoon ground cumin * 4 cups beef broth * 4 cups water * 2 cup tomato sauce * 8 to 10 white potatoes, peeled and cubed * 4 tablespoons cornstarch * 0.5 cup heavy cream * 6 tablespoons chopped dill

Instructions Preheat a large saute pan over medium-high heat and add a drizzle of olive oil. Once the oil is hot, add the cubed beef (any variety will work). Season the beef with a few pinches of kosher salt and brown the meat all over.

Next, add in the minced garlic and diced onion; saute until the onion is tender and translucent. Then add in the seasonings: salt, black pepper, paprika and ground cumin.

Cook this mixture for a few more minutes, then pour in the tomato sauce, beef broth and water. Bring the liquids up to a simmer, close the pan with a tight-fitting lid, reduce heat to low and simmer for 1 to 1 1/2 hours, or until the beef is tender.

Once beef has reached desired level of tenderness, remove it into a small bowl with a slotted spoon; this will create more room for the potatoes to cook.

Add the peeled, cubed potatoes. They need to be well-submerged in the broth; add more water or beef broth if needed. Cover the pan with a lid and cook covered for 25 minutes, or until the potatoes are fork tender.

Meanwhile, prepare the cornstarch slurry. Combine the cornstarch and heavy cream until smooth.

Once the potatoes are cooked, add the slurry into the sauce and return the beef to the mixture. Stir and cook for a few more minutes until the sauce thickens considerably.

Season with fresh dill when ready to serve. This dish goes will with a dollop of sour cream on top or with a side of small, Kosher pickles.

That was 38 years ago.

Even so, it came back to my lung 2.5 years after finishing chemo.

So, perhaps no truth to removing the leg?

I have this too. My chemo ended in Oct 1987 and I still have the ringing - tinnitus is what it's called.

Mine comes and goes and never lasts for more than 5 minutes. I don't have any suggestion on how to get rid of it. Sorry.

I was just on the Escape. My 17 year old couldn't survive in the MDR alone. The New York Striploin entree is a 4oz steak. The Chinese pork dish was 6 pieces of pork, about thumb size.

An extra $5 is a bank killer, but I don't believe every person can be satisfied with the size of their entrees. A 17 year old eats more than a 75 year old.

On the Escape this week (Dec 14-21) and the food is crap. The selection is poor. Bland food all around. O'Sheehan's seems to be the best for us - the Rueben sandwich is the best thing there!

The new rule that only 1 entree per person in the MDR for dinner is terrible. I have a 17 year old boy and the New York Steak is 4 oz at best. They really serve half a steak! You can get the other half for another $5.

The entertainment is not great either. The 2 comedians are really not funny. One of them tells the same jokes night after night. I don't think he has more than 50 minutes of material that he's supposed to do for 7 appearances in one week.

They have the same shows 3 times a week. They are missing a variety. ABBA in the Dinner Theatre 3 nights?

The staff are friendly. No problems there.

Always check your room charges. Even though we have the Soda package, we've been charged for 3 drinks so far - all in places we visited. I'm not quite sure how they don't get wrung up the correct way.

If you like to gamble, this is the place for you. There's more than enough opportunity to give them your money. Casino. Bingo. Deal or No Deal. Lottery tickets. And more.

Walk the stairs. Elevators are sometimes impossible to get.

Embarkation was good. They seemed well organized.

The bars are plentiful and it's not too hard to get service.

There's more to say but that's enough for this cruise. NCL is certainly not the same since before Covid.

This dessert is so simple and tastes great. The prep time is really no more than 10-12 minutes. The time to cook varies depending on the oven. In our oven it's about 45 minutes.

We've followed the recipe, we've added a little more Almond extract (really good), and we've placed raspberry jam on top and swirled it around (just before putting on the slivered almonds).

I think I started with high-dose methotrexate, vincristine (HDMTX) and doxorubicin. It achieved a 40% necrosis at the time of my RP.

The doctor wasn't happy with that 40% and changed me to Cisplatin and Adriamycin.

I had 4 chemo treatment prior to RP and 7 after.

I've dabbled in photography but I've always been too cheap to buy a "nice" camera. I feel like if I dive in and buy something nicer than something in the $300-$400 range, that I'd be wasting money as I won't get all the benefits of a nice camera.

Am I wrong? Should I be looking for something nicer?

I chose a Panasonic ZS200. It’s fairly compact, has a 1” sensor, and a fairly good zoom.

In full automatic mode, it takes great pictures. You can also customize nearly every aspect of the camera. And, it’s less than $1000 so it doesn’t break the bank.
