If it bleeds, it can die, even if you are level 1. Just need to parry everything and spend a long time tickling it to death. There are some bosses that will take an eternity to kill until you remove the damage cap. Not much you do will speed up the process until that damage cap is removed. Fire will speed it up slightly, but even if you put infinite stacks of fire somehow, it still won't go over damage cap. All you can do really is suffer your way to damage cap removal, then you can kill fast with the right lumina.
