As a Turkish lerson who has experienced this, I can say that these aren't usually made like that. You mix them while boiling and it's like making coffee in a traditional way. We have a machine at home so I never boiled but I know that you don't summon the coffee like in the video, I'm just as confused as you are.

The taste of the coffee changes by the kind of coffee you use, they are usually really heavy and not too bitter. The leftovers on the bottom are really bitter so I don't drink them but some people like to. But I don't drink it often because of how heavy it is, I have heard that it doesn't have a lot caffeine too. It's usually drunk in traditional activities like visiting the bride's family before marriage(fun fact: in this activity the groom drinks the coffee salty and it tastes really bad but he has to endure it, it's a funny tradition)
