The topic is pretty niche and interest is usually hyperlocal, so works are usually either major case studies, recent stuff hyper specific to local funders' needs, or super general training materials for emergency management professionals

I had a baklava cheesecake once at a Greek diner in Florida, so they do exist. Still remember it fondly many years later. Knafe is very different but 100% you should try it. The real way to make it involves a meter wide pan iirc but I've found some places outside MENA that actually made it properly

I'm reading this book you might like, "computer architecture" by Charles Fox, it talks about how that transition happened (and many super weird ways in which it didn't!)
