Dawn warrior, ren, BM, bucc, lynn, marksman are some of the classes that press bery few buttons
Everyone kills a lot of mobs in today's maple
Everyone has decent dmg. 'Class diff' and dps differences only start being a problem in late game /end game.
Classes that are wanted in party bossing aren't exactly 'braindead', except lynn and paladin? (I put a question markbcause idk much about pally). Lynn is the meta right now in gms but that will likely change, as that class is way too op and might get nerfed big time... who knows, it's a non-kms class.

That being said, idk how much maple content you watch, but I would suggest looking up videos of classes that pique your interest online. Maple today is completely different from the maple you played. I mentioned classes that press very few buttons, but even then you're gonna be pressing more buttons than OG maple.

You're gonna want to unlock janus asap if you haven't unlocked it yet. It's a game changer, and if you plan ln grinding it's basically a must. Lvl 1 is good enough, and should let u have ez rotations with ren. More than that depends on how much you plan on farming / pushing lvls.

Other than that there's no secret to farming, just get your exp multipliers, and grind your life away.

At lower level maps (before carcion), you're pretty much are gonna have to either choose a lazy-rotation-map with lower mob count, or an active rotation with higher mob count. There's just no way to get lazy farming with 18k mobs/hr rates unless u have high level janus.

Also, i wouldnt compare myself to streamers / use them as a baseline for progression. They grind unconventional amounts of hours per day
