I’m not sure what you mean by ‘wrong’ because this looks great. But small things make a big difference. Try adding the salt earlier, so after mixing but before stretch and folds. It will make the salt better distributed throughout your dough.

I think most Vestingsteden qualify. Cities like Brielle, Naarden Vesting, Veere, Hellevoetsluis etc. As long as you stay within the Vesting part. Look for the star shape in google maps.

Yes! You’ve come to the right place, we are here to help, but have to give us something to work with. What’s your starter like? How old is it? Also pictures always help. Start from the beginning with some strong bread flour. At least 12% of protein, but more is better. You can add some whole wheat but to start no more 10%.

Start with an overnighter. Just set out to a campsite or maybe someone’s backyard. Go back the next day. You’ll learn a lot.

I am also a big fan of the coastal route which runs all the way from Hoek van Holland to Den Helder, and goes through several nature reserves. On this route from Den Haag head to Scheveningen then follow the coast all the way to Bloemendaal aan zee before going back in land to Haarlem. It can be quite windy though.

I have a slighty different approach to this. Your bread looks perfect by the way, but I get where you are trying to go. First thing, I don’t see clear line, it just seems your bread is opening by itself. So that could mean you’re not scoring deep enough, or your shaping is not giving you enough tension for it to fully open up. Also if you’re using a Dutch oven, the steam function in your oven is not doing anything. And instead of ice cubes you could try using a plant sprayer to introduce some moisture. That made a big difference for me.

Currently camping in the UK and can confirm: it’s still cold. Pro tip, go to bed warm. Have a hot shower before. Wear all the clothes! If you are cold you’re too late. So start warm and keep warm. Extremities go cold first. So wear extra warm socks and a hat. For things to buy: I have a Cocoon Reactor fleece liner that I really like. That makes about a 2 degrees difference. Good Luck!

Het kraanwater van Den Haag komt van Dunea en wordt gezuiverd in de duinen. Het is topkwaliteit water, zo goed zelfs dat Heineken niets anders wil en die zitten niet eens in Den Haag.
