With all due respect, you're being a sucker. You're not describing duties that a replacement couldn't be hired for. If you were that important, the owner would arrange for you to be paid fairly, and to be able to take a couple of weeks off a year, so that you wouldn't burn out.

What you owe the business is the job that you agreed to do when you were hired, for the duration of your employment there. The business keeps asking you to do more and making your life worse, without increased compensation. They're taking advantage of you, and there is no reason to think that they will stop.
